Found this recipe in the back of one of my middle school notebooks written out in pencil. I can't even remember where it came from.

Ingredients

  • 1 c
    crisco or store brand shortenening -regular flavor
  • 1 c
    white granulated sugar
  • 1 c
    brown sugar packed firm
  • 2
    eggs room temp.
  • 1 Tbsp
    vanilla extract
  • 1 1/2 c
    ap flour
  • 1 tsp
    salt
  • 2 c
    regular oats, not "quick cook"
  • 2 c
    pecans, in pieces
  • 1 c
    rice crispies (any brand)
  • 1 c
    coconut, flaked

How to Make Alabama Cookies

Step-by-Step

  1. Preheat oven to 325 degrees
  2. Cream Crisco and sugars till combines.
  3. Add Eggs and vanilla extract and beat well on medium speed.
  4. Combine flour and salt in a separate bowl, then SLOWLY add to creamed mixture till they form a dough.
  5. By hand add remaining ingredients and stir gently.
  6. Dollop out by "old fashioned" tablespoons onto a lined cookie sheet for easier cleanup.
  7. Bake each batch 10-12 minutes


    Cool 20 minutes.
