rich fudgy zucchini brownies with frosting

This recipe was developed by Sherry Bussa. I got it from her Weight Watchers site. (5 Points Value per serving) This is exactly how she wrote it. I had to make some slight modifications that I will post later. Not only are they healthy but they taste great. Hope you enjoy them too.

Ingredients

  • 2 cups zucchini, uncooked
  • 2 cups all purpose flour
  • 2 cups powdered sugar
  • 1 1/2 cups sugar substitute
  • 2/3 cup applesauce, unsweetened
  • 1/2 cup walnuts
  • 1/2 cup chocolate chips, semisweet
  • 1/2 cup greek yogurt, plain fat-free
  • 1/4 cup egg whites
  • 1/4 cup light butter
  • 1/4 cup almond milk, plain unsweetened
  • 1 medium banana, mashed
  • 1 ounce instant espresso
  • 1 tablespoon honey
  • 1/4 tablespoon cocoa powder, unsweetened
  • 2 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon table salt

How To Make rich fudgy zucchini brownies with frosting

  • Step 1
    Preheat oven @ 350 degrees F. Spray a 9 x 13 baking dish with baking spray.
  • Step 2
    In a bowl, mix together applesauce, sugar and vanilla.
  • Step 3
    In a separate bowl, mix dry ingredients: flour, cocoa powder, baking soda & salt.
  • Step 4
    Fold in zucchini, chocolate chips, yogurt, espresso, honey, chili powder, banana, egg whites & walnuts. If too thick, add water.
  • Step 5
    Put mixture in baking dish and bake @ 350 degrees F for 40 minutes. Let cool before frosting.
  • Step 6
    Frosting: cream 1/4 cup soft butter with 1/2 cup cocoa powder until smooth. add vanilla. alternate almond milk and powdered sugar until desired consistency. add cocoa mixture, frost brownies.
