Ingredients

cream cheese - regular or light - softened
1/3 c
sugar

1/8 tsp
salt
1 c
mini semi-sweet chocolate chips

3 c
all purpose flour
2 c
sugar
2/3 c
cocoa
2 tsp
baking powder
1 tsp
salt
2 c
water
2/3 c
vegetable oil
2 Tbsp
white vinegar
2 tsp
vanilla

How to Make Chocolate Cheesecake Cupcakes

Step-by-Step

  • 1Preheat oven to 350 degrees. Line muffin cups with paper liners.
  • 2Prepare filling. Beat cream cheese, sugar, egg and salt until smooth and creamy. Stir in chocolate chips, and set aside
  • 3For cupcakes, stir together flour, sugar, cocoa, baking soda, and salt in large owl. Add water, oil, vinegar, and vanilla, and beat for 3 minutes, til smooth.
  • 4Fill muffin cups 2/3 full with batter. Then spoon one level Tbsp. of filling into center of each cupcake.
  • 5Bake 20 to 25 minutes, until toothpick inserted in cake portion comes out clean. Just before removing from oven, set one candy kiss in center of each cupcake and bake a bit longer, to allow candy to soften.
  • 6Remove from oven and let cool 5 minutes in pans. Transfer to wire racks to cool completely.
