chocolate bread pudding-bakintime
I remember my mom making this, when I was a little girl, however, I haven't got her recipe. I just like to "wing-it" and make it my way with what I have. Today, I used some fresh eggs that a friend gave us recently; they were blue eggs which I think come from Arauncana chickens.

Ingredients
- 1/2 cup sugar
- 2 ounces unsweetened baker's chocolate
- 3 tablespoons butter
- 1 teaspoon vanilla extract
- 1 tablespoon cocoa powder,unsweetened
- 1 teaspoon espresso powder
- PLACE THOSE SIX INGREDIENTS IN DOUBLE BOILER OVER HOT WATER AND STIR FREQUENTLY TO BLEND
- 2 cups half and half
- 6 medium eggs, beaten
- COMBINE HALF AND HALF WITH ABOVE INGREDIENTS UNTIL BLENDED, THEN ADD BEATEN EGGS, AND REMOVE FROM HEAT.
- 9 slices good bread, crusts removed on edges if desired
- 2 tablespoons butter, to dot top with
- 1 tablespoon sugar, to sprinkle on top.
- SPRAY A DEEP 3-QUART CASSEROLE WITH COOKING SPRAY; LINE THE CASSEROLE WITH SEVERAL LAYERS OF BREAD, SLICED AND CUT INTO STRIPS.

Step 1PREHEAT OVEN TO 350 DEGREES. ASSEMBLE PUDDING BY LAYERING BREAD, THEN POUR MIXTURE OVER AND PAT DOWN AND LET REST A FEW MINUTES TO SOAK UP THE CHOCOLATE.

Step 2DOT THE TOP WITH SMALL PIECES OF THE BUTTER AND SPRINKLE SUGAR OVER THE TOP. BAKE PUDDING FOR 45 MINUTES UNCOVERED.

Step 3REMOVE AND LET COOL ABOUT TEN MINUTES, BEFORE SERVING IF YOU LIKE IT VERY WARM. TOP IT WITH EITHER WHIPPED CREAM, VANILLA ICE CREAM OR A SAUCE OF YOUR CHOICE. I THOUGHT OF KAHLUA, OR HOT CHOCOLATE SAUCE WITH ICE CREAM! I ATE MINE PLAIN AND LOVED IT.
