crispies peanut butter eggs - delish!

My family loves the crunch in these eggs, combined with the smoothness of the peanut butter mixture...so, so good! Just in time for Easter...this recipes makes 75 balls or 38 eggs...enjoy!

Ingredients

  • 2 cups peanut butter
  • 1/2 cup butter, softened
  • 1 pound confectioners' sugar
  • 3 cups rice crispies cereal
  • 10 ounces ghiradelli chocolate chips - i used half milk chocolate & half semi sweet
  • 2 tablespoons shortening

How To Make crispies peanut butter eggs - delish!

  • Step 1
    Combine peanut butter, butter and powdered sugar in a bowl. Blend together well.
  • Step 2
    Add cereal and blend into peanut butter mixture. I used my hands for this part, to get thoroughly mixed.
  • Step 3
    Form into balls or eggs. I used a good tablespoon full for the eggs.
  • Step 4
    Chocolate coating: In a microwave safe bowl; add chips and shortening...microwave for 1 minute, stir...if all of chocolate is not melted, put back into microwave and heat another 30 seconds...
  • Step 5
    I use a fork and dunk the eggs; letting the excess chocolate drip off. Chill to set.
