Spread a little love with this Valentines Day recipe. I have adapted the recipe for the Boston Cream poke cake to make it a sweet treat for your valentine.

- FILLING
- 1 box 3.4 oz. instant cheesecake flavored pudding
- 1 1/2 cups heavy whipping cream
- 1/4 cup milk
- 1/2 cup sour cream
- GANACHE
- 1 cup heavy whipping cream
- 12 ounces cherry chips
- CAKE
- 1 box cherry chip cake mix
How To Make valentines day poke cake or cupcakes

Step 1Filling: Mix together pudding, cream, powdered sugar, milk, and sour cream. Beat on medium speed until stiff peaks form. It will be runny if you don’t beat it long enough. Then cover and put into fridge til needed. If you don’t use all of it for this recipe, it will last a couple days in the fridge.

Step 2Ganache: Heat cream in sauce pan until it comes to a boil. Remove from heat and pour over cherry chips in a mixing bowl. Stir to mix together and let cool slightly. Keep in the fridge until ready to serve.

Step 3Make the cake mix as directed for either a cake or cupcakes. Once cooled poke holes in the center of the cupcake, or poke holes all over the cake. I use the handle of a big mixing spoon to poke the holes. Use a pastry bag with a large tip, or you can use a plastic lunch bag with one of the corners just snipped to fill in the holes. Spread the ganache over the cake and then put in the fridge til ready to serve.
