Ingredients

  • 1 cup butter, softened
  • 1 3/4 cups granulated sugar
  • 5 large egg whites
  • 2 cups pureed strawberries
  • 1/2 cup sour cream
  • 1 teaspoon strawberry extract
  • 3 cups cake flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • FROSTING
  • 1 package cream cheese, softened (8 oz)
  • 1/4 cup butter, softened
  • 3 1/4 cups confectioners' sugar
  • 1/4 cup pureed strawberries
  • 1/2 teaspoon strawberry extract
  • 1 cup seedless strawberry jam, divided
  • sliced strawberries (optional)

When using jam in layers, if you put a ring of frosting around the edge of the cake with a piping bag it keeps the jam from bleeding out of the edges and mixing in the frosting.
  • Step 1
    Grease and flour three 9-inch round pans, set aside. In a large bowl, cream butter and sugar until light and fluffy.
  • Step 2
    Add egg whites, one at a time, beating well after each addition.
  • Step 3
    Beat in the strawberries, sour cream, and extract.
  • Step 4
    Combine the flour, baking powder, baking soda, and salt.
  • Step 5
    Add to the creamed mixture.
  • Step 6
    Transfer batter to prepared pans.
  • Step 7
    Bake at 350 for 20 to 25 minutes or until a toothpick inserted near the center comes out clean. Cool before removing from the pan to a wire rack to cool completely.
  • Step 8
    Frosting: Beat cream cheese and butter until fluffy, and add the confectioners' sugar, strawberries, and extract; beat until smooth. Place the bottom cake layer on your serving plate; top with jam and then frosting, repeat layers.
  • Step 9
    If you choose, garnish with sliced strawberries.
