Ingredients

  • 36 medium
    cupcake liners
  • 1 box
    cake mix, strawberry
  • 0.5 box
    cake mix, butter flavor
  • 16 oz
    strawberries, frozen
  • 1/2 c
    milk, 2%
  • 1 Tbsp
    lemon juice
  • 2 Tbsp
    coconut rum
  • 3/4 c
    oil
  • 1/2 c
    butter, melted
  • 6
    eggs
  • 1 c
    coconut, grated - optional

How to Make Strawberry CupCakes

Step-by-Step

  1. Preheat oven to 375* As soon as cupcakes are in the oven, reduce heat to 350*
    Bake at 350* for 15-20 minutes
    Lightly brown; Toothpick test should be clean
  2. Puree strawberries and coconut rum
    Melt butter
    Combine milk and lemon juice
  3. Combine cake mix and all ingredients except strawberry puree and grated coconut;
    Beat on medium until combined.
    Add strawberry puree and beat on medium for 2 minutes; no more
  4. IF grated coconut is desired, fold into batter just before transferring to cupcake liners
