I got from Pennsylvania Dutch Cooking. I change the sugar and salt so diabetic can have the cake.

Ingredients

  • 3 - eggs
  • 1 cup sugar or splenda sugar
  • 1 cup flour
  • 1/2 teaspoon salt or light salt
  • 1 teaspoon baking powder
  • 3 tablespoons warm water
  • 1 teaspoon lemon juice

How To Make sponge cake

  • Step 1
    Beat the eggs until thick and creamy. Add sifted sugar and beat well. Add warm water and lemon juice and beat again.
  • Step 2
    Sift the flour, add salt or light salt and baking powder and sift again. Combine dry ingredients with the mixture, a little at a time folding in gently.
  • Step 3
    When well blended pour in a ungreased pan with center tube. Bake in moderate 350F for 50 minutes.
