Sheet Cake with chocolate no bake cookie frosting

So I was attempting to make a Texas sheet cake for our family reunion picnic and I thought I enough powdered sugar but I didn't so I came up with the idea of making the frosting like chocolate no bake cookies. The oatmeal and coconut made the frosting thicker. It was a hit at the reunion. I had no leftover. Try it. So fudgey and good. If you like no bake cookie you will love this.

Ingredients

  • 2 c
    sugar
  • 2 c
    flour
  • 4 Tbsp
    hershey's cocoa powder
  • 11/2 c
    butter
  • 1 c
    water
  • 2 tsp
    vanilla
  • 1/2 c
    buttermilk
  • 1/2 tsp
    baking soda
  • 2 large
    eggs
  • ·
    frosting
  • 4 Tbsp
    hershey's cocoa powder
  • 6 Tbsp
    half and half
  • 1 tsp
    butter
  • 1 stick
    vanilla
  • 1 c
    powdered sugar
  • 1 c
    oatmeal
  • 1/2 c
    sweetened flake coconut
  • 1 c
    chopped walnuts

How to Make Sheet Cake with chocolate no bake cookie frosting

Step-by-Step

  1. For the cake
    Combine flour and sugar in a large bowl and set aside.
  2. Dissolve baking soda in buttermilk and set aside.
  3. Combine cocoa, butter and water in heavy saucepan and bring to a boil.
  4. Remove from heat and add to flour mixture. Stir in the buttermilk mixture and add eggs. Beat until well combined.
  5. Preheat oven 375 degrees. Spray a 17 X 12 inch jelly roll pan and pour in the cake mix. Bake for 20 minutes.
  6. For the Frosting.
    Melt the butter, milk, and cocoa on stove and bring to a boil. Remove from heat.
  7. Beat in powdered sugar, vanilla, oatmeal, and coconut. Stir in nuts.
  8. Spread frosting on warm cake.
