I found this in a cookbook many years ago and modified it just a bit. I love this cake and so does my family. I hope you will too

Ingredients

2 c
sugar
1 1/2 c
oil
3 tsp
cinnamon
1 tsp
allspice, ground
2 tsp
soda
2 tsp
baking powder
1/2 tsp
salt
2 c
cooked pumpkin,mashed
1 c
chopped walnuts
3 c
all purpose flour
4
eggs
2 tsp
vanilla

How to Make Pumpkin cake with Buttermilk glaze

Step-by-Step

  • 1Mix together the first 8 ingredients in a large bowl. Beat on low for 1 minute.
  • 2Mix nuts with flour and toss until coated.
  • 3Add 1 cup of flour- nut mixture alternately with each egg, beating after each addition on low speed just enough to mix.
  • 4Add vanilla and stir.
  • 5Pour batter into well greased and floured 10 inch tube pan.
  • 6Bake at 350 degree F. for about 1hour and 15 minutes or until done.
  • 7Place on rack and cool for 20 minutes. Then pour glaze over cake and cool in pan. If not adding glaze, remove from pan to finish cooling
  • 8BUTTERMILK GLAZE- Mix all ingredients in saucepan.1 cup sugar,1/2 cup buttermilk, 1/2 teaspoon vanilla, 1/2 teaspoon baking soda. Bring to a boil over medium heat and boil for 2 minutes. Spoon over cake in pan and let it cool.
