pumpkin cake with buttermilk glaze

I found this in a cookbook many years ago and modified it just a bit. I love this cake and so does my family. I hope you will too

Makes 1 ten inch cake
Ingredients
- 2 cups sugar
- 1 1/2 cups oil
- 3 teaspoons cinnamon
- 1 teaspoon allspice, ground
- 2 teaspoons soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups cooked pumpkin,mashed
- 1 cup chopped walnuts
- 3 cups all purpose flour
- 4 - eggs
- 2 teaspoons vanilla
How To Make pumpkin cake with buttermilk glaze

Step 1Mix together the first 8 ingredients in a large bowl. Beat on low for 1 minute.

Step 2Mix nuts with flour and toss until coated.

Step 3Add 1 cup of flour- nut mixture alternately with each egg, beating after each addition on low speed just enough to mix.

Step 4Add vanilla and stir.

Step 5Pour batter into well greased and floured 10 inch tube pan.

Step 6Bake at 350 degree F. for about 1hour and 15 minutes or until done.

Step 7Place on rack and cool for 20 minutes. Then pour glaze over cake and cool in pan. If not adding glaze, remove from pan to finish cooling

Step 8BUTTERMILK GLAZE- Mix all ingredients in saucepan.1 cup sugar,1/2 cup buttermilk, 1/2 teaspoon vanilla, 1/2 teaspoon baking soda. Bring to a boil over medium heat and boil for 2 minutes. Spoon over cake in pan and let it cool.
