Perfect for the 4th of July! Great tasting cheesecake w/ lots of fruit...yum!

Ingredients

  • 1-3/4 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 6 tablespoons melted unsalted butter
  • 2 - 8 oz pkgs cream cheese, softened
  • 2/3 cup sugar
  • 1 tablespoon flour
  • 2 large eggs
  • 2 teaspoons lemon juice
  • 1-1/2 teaspoon vanilla
  • 2 cups halved strawberries
  • 1-1/2 cup blueberries
  • 1/4 cup strawberry preserves, melted

How To Make patriotic cheesecake

  • Step 1
    Heat oven to 325. Lightly spray a 9" springform pan w/ cooking spray. In medium bowl, combine cracker crumbs, sugar and butter. Press into bottom and up sides of pan. Bake 10 mins, let cool.
  • Step 2
    In lg bowl, beat cream cheese 2/3 cup sugar and flour until smooth. Beat in eggs, lemon juice and vanilla. Pour into crust. Place pan on baking sheet and bake 30-35 mins, should still be a little jiggly in center. let cool.
  • Step 3
    refrigerate 5 hrs. Arrange strawberries on outside edge. Place blueberries in center. Gently brush w/ melted preserves.
