1Heat oven to 325. Lightly spray a 9" springform pan w/ cooking spray. In medium bowl, combine cracker crumbs, sugar and butter. Press into bottom and up sides of pan. Bake 10 mins, let cool.
2In lg bowl, beat cream cheese 2/3 cup sugar and flour until smooth. Beat in eggs, lemon juice and vanilla. Pour into crust. Place pan on baking sheet and bake 30-35 mins, should still be a little jiggly in center. let cool.
3refrigerate 5 hrs. Arrange strawberries on outside edge. Place blueberries in center. Gently brush w/ melted preserves.
