Perfect for the 4th of July! Great tasting cheesecake w/ lots of fruit...yum!

  • 1-3/4 c
    graham cracker crumbs
  • 2 Tbsp
  • 6 Tbsp
    melted unsalted butter
  • 2
    8 oz pkgs cream cheese, softened
  • 2/3 c
  • 1 Tbsp
  • 2 large
  • 2 tsp
    lemon juice
  • 1-1/2 tsp
  • 2 c
    halved strawberries
  • 1-1/2 c
  • 1/4 c
    strawberry preserves, melted

How to Make Patriotic cheesecake


  1. Heat oven to 325. Lightly spray a 9" springform pan w/ cooking spray. In medium bowl, combine cracker crumbs, sugar and butter. Press into bottom and up sides of pan. Bake 10 mins, let cool.
  2. In lg bowl, beat cream cheese 2/3 cup sugar and flour until smooth. Beat in eggs, lemon juice and vanilla. Pour into crust. Place pan on baking sheet and bake 30-35 mins, should still be a little jiggly in center. let cool.
  3. refrigerate 5 hrs. Arrange strawberries on outside edge. Place blueberries in center. Gently brush w/ melted preserves.
