orange olive oil cake w/chocolate orange ganache

An easy small cake that gets better with time. Added the zest and juice of one large orange for added flavor. Normally I dust with just powdered sugar, but made a chocolate orange ganache and drizzled then added powdered sugar. I love orange chocolate!!

Ingredients

  • 1 large orange zest and juice
  • 4 - eggs
  • 1 cup sugar
  • 1/2 cup olive oil
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • CHOCOLATE ORANGE GANACHE
  • 4 ounces chocolate chips
  • - few drops orange extract
  • 1/4 cup heavy cream.
  • 1/2 teaspoon instant coffee

How To Make orange olive oil cake w/chocolate orange ganache

  • Step 1
    Preheat oven to 350. Grease and flour small cake pan. Sift all dry ingredients. In separate bowl using hand beater, beat egg and sugar til light in color, beat in orange juice, zest, vanilla then olive oil.
  • Step 2
    Combine flour mix half at a time til well mixed. Pour in cake pan and bake for 20-30min. or until toothpick comes out clean. Let cool completely. Dust plate with powdered sugar and place cake over.
  • Step 3
    add chocolate chips to glass bowl with few drops orange extract, heavy cream, & coffee (coffee brings out rich taste of chocolate) I melt in microwave at 30 sec at a time. Mix and drizzle over cake and dust again with powdered sugar.
