oatmeal cake
I remember my momma making this cake when I was young. While the others were out playing, I was waiting to lick the spoon. This is one of only a handful of recipes that she actually wrote down. Hopefully, I can make one in the near future & take some pictures of it. In the meantime, I hope you'll try it & enjoy it.

Ingredients
- 1 cup oatmeal, uncooked
- 1 1/2 cups boiling water
- 1/2 cup butter, unsalted, 1 stick
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 - eggs
- 1 1/3 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup chopped nuts, optional
- TOPPING
- 1/4 cup butter, unsalted, 1/2 stick
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup light brown sugar
- 1 cup coconut, flaked, i use "bakers angel flake coconut"
- 1 cup chopped nuts
How To Make oatmeal cake

Step 1Cover the oatmeal with the boiling water & let stand for 20 minutes.

Step 2Cream butter with the sugar. Add vanilla. Add eggs, one at a time. Beat well. Add oatmeal.

Step 3ALWAYS measure flour, sift, then measure again. Then add the salt, baking soda & cinnamon. Add to the first mixture. Beat until smooth. Add nuts.

Step 4Pour into a greased 8x11 glass casserole dish. (I use "Butter Flavor Crisco" to grease my dish.) Bake for 40 minutes at 350° or until a tooth pick comes out clean.

Step 5Cool slightly & cover with topping. Mix all topping ingredients & spread on top of cake. Brown in the broiler, on 350°for 5-6 minutes, until it starts to bubble on top.

Step 6For decorations, sometimes I place pecan halves all around the outside edge of the top of the cake. Kinda makes it look more purty.
