My sister just loved trying out new recipes for baking cakes. This is her Famous Carrot Cake. It's full of spicy flavor. Yum is all I can say!

Ingredients
- 1 1/2 cups oil
- 2 cups sugar
- 4 - eggs-room tempature
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3 teaspoons cinnamon
- 2 teaspoons vanilla
- 3 cups grated carrots
- *opt 1 box dates, chopped
- *opt 1 cup chopped walnuts
How To Make my sister's carrot cake

Step 1heat oven to 325 degrees. Lightly grease cake pans. Set aside.

Step 2Beat together oil, sugar and eggs in a large bowl. Add the flour, baking soda, salt and cinnamon. Stir well. Add the carrots and the vanilla. Add the dates and nuts if using. Stir well.

Step 3Pour into greased pans and bake for 50-60 minutes or until toothpick inserted comes out clean. Frost with a cream cheese icing
