This recipe was also put on JAP by my Daughter Diana Porter from Osage Wy. It is one of my very favorite cakes and can even be turned into a fruit cake by just adding mixed fruit, purchased in the grocery stores. My Mother made it a lot and I'm so glad Diana is also making a lot of her Grandmother's recipes. I hope you all enjoy it.

Ingredients

  • 2 cups raisins
  • 2 cups brown sugar firmly packed
  • 1 cup brewed coffee
  • 2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1/2 cup shortening
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 2 cups applesauce
  • 2 - eggs
  • 3 cups flour
  • 1 cup chopped nuts. i prefer walnuts

How To Make my mothers applesauce spice cake

  • Step 1
    For loaf pan Bake at 350* 60 min For Layer cake Bake at 325* 30-40 min Grease and flour your pan or baking dish.
  • Step 2
    In a sauce pan add the first 6 items and bring to a boil. Set aside to cool.
  • Step 3
    Add the 1/2 cup shortening and 2 cups applesauce. Add the dry ingredients alternating with the cooled raisin mix and mixed together. Add the nuts and pour into your prepared baking pan or dish.
