I've seen this recipe but being diabetic I changed a few things. Gotta make it fun and tasty!

Ingredients For my 5 min. cake in a cup

  • 4 Tbsp
    all purpose flour
  • 4 Tbsp
    stevia or turvia
  • 2 Tbsp
    cocoa powder
  • 1
    egg
  • 3 Tbsp
    milk (i use hood carbcountdown - 3 grams of sugar per 8 oz)
  • 3 Tbsp
    applesauce, unsweetened (substitued for the 3 tbls oil which is 14 grams of fat)
  • dash
    vanilla extract (less than 1/4 tsp)
  • pinch
    salt
  • pinch
    baking powder
  • dash
    cinnamon
  • 12
    sugar free chocolate chips (located where your baking items are)

How To Make my 5 min. cake in a cup

    Measure all your dry ingredients right into the cup first.

    Measure all your wet ingredients into a little bowl so you can beat the egg. (I found this to be easier than trying to beat the egg in the cup with all the dry ingredients)

    After wet and dry ingredients are mixed together I take about 12 Sugar Free Chocolate Chips and mix them around in the cup. Gives each bite a little chocolate treat!

    Put in microwave for 5 minutes. (I have a small microwave and have found this to be the perfect time. Some said 3 minutes but I found the cake to be too doughy!)

    HANDLE IS HOT ON CUP!!! Remove from microwave and run a knife around the sides and turn upside down on a small plate. (You can eat it from cup but it's so hot to hold and it taste better when it's warm). I cut the cake in half and then add a tablespoon of Sugar Free Cool Whip on top. I have also warmed Blackberries or Blueberries (I use frozen) and put them on top of the cool whip or topped the cool whip with fine chopped walnuts or pecans for a totally different taste. For me this is the perfect dessert and I don't have a whole cake to worry about. I fix it when I'm craving cake and it's the perfect dessert. I try to find different toppings to change this recipe around.
