"Monday's Chocolate Surprise Cake"

This is my go to chocolate cake recipe. I always seem to make it on Monday's for the kids as a treat to start the week. We don't have much cakes mixes here in Ireland so you have to make it from scratch but its worth it!

P.s the surprise is what types of chocolates I put on top of the cake. I always use the kids favorites

1 c
butter, unsalted
3/4 c
eggs separated
1 1/3 c
self raising flour
2 Tbsp
corn starch
1 tsp
baking powder
2 Tbsp
cocoa powder
1 tsp
vanilla extract
3/4 c
grated chocolate
tub of chocolate frosting
500 ml
heavy cream, cold
1 tsp
vanilla extract
2 Tbsp
confectioners' sugar

How to Make "Monday's Chocolate Surprise Cake"


  • 1Preheat the oven to 350F. Grease 2 8x2 inch cake pans buttered and lined with parchment
  • 2Beat the butter for 1 min until creamy and gradually beat in the sugar
  • 3Beat the egg whites until stiff. Stir the egg yolks, and vanilla into the butter and sugar mixture.
  • 4Sieve the flour, cocoa powder ,cornstarch and baking powder into the mixture and stir to combine. Fold in the egg whites and mix gently. Pour batter equally in to two cake pans and bake for 35-40 mins or until sponge springs back. leave to cool
  • 5Whip the heavy cream and confectioners sugar in a bowl, add tsp vanilla ,
  • 6Spread cream and some of the frosting on cakes and sandwich together
  • 7Spread the remainder of the cream on the sides of the cake. Cover the sides in grated chocolate and cover the top with chocolate frosting. Decorate with some chocolate candys .Refrigerate for 15mins before serving. Enjoy
