Ingredients
- - 18 1/2 box white cake mix
- - 11oz can mandarin oranges drained juice saved
- - 3 egg whites
- - 1/2 cup olive oil
- - garnish 1/2 cup sweetened flaked coconut
- - pre-heat oven 350
- PINEAPPLE TOPPING
- - 2[8oz] cans crushed pineapple
- - 3 1/2 pack instant vanilla pudding mix
- - 1 tub cool whip
- - 1/2 cup sweetened flaked coconut flakes

Step 1first part:combine cake mix reserved orange juice egg whites and oil.blend w.electric mixer on med. speed for 2 mins. until creamy[I would chop up the oranges myself.easier] fold n oranges. pour n2 a greaced and floured 13x9 baking pan. bake at 350 for 25-35 mins or until tooth pick comes out clean.

Step 2cool n pan for 10 mins. remove to a cooling rack to cool completely. transfer 2 a serving platter. frost top and sides with pinapple topping. sprinkle with coconut

Step 3making the topping: pour pineapple and its juice n a med mixing bowl. stir in pudding mix. and fold cool whip and coconut. mix well and chill cake over nite .its best that way. this is what u frost the cake with
