my friend and I got this receipe out of the happiness magazine and shes made it a few time and its great!!

Ingredients

  • - 18 1/2 box white cake mix
  • - 11oz can mandarin oranges drained juice saved
  • - 3 egg whites
  • - 1/2 cup olive oil
  • - garnish 1/2 cup sweetened flaked coconut
  • - pre-heat oven 350
  • PINEAPPLE TOPPING
  • - 2[8oz] cans crushed pineapple
  • - 3 1/2 pack instant vanilla pudding mix
  • - 1 tub cool whip
  • - 1/2 cup sweetened flaked coconut flakes

How To Make mandarin orange cake

  • Step 1
    first part:combine cake mix reserved orange juice egg whites and oil.blend w.electric mixer on med. speed for 2 mins. until creamy[I would chop up the oranges myself.easier] fold n oranges. pour n2 a greaced and floured 13x9 baking pan. bake at 350 for 25-35 mins or until tooth pick comes out clean.
  • Step 2
    cool n pan for 10 mins. remove to a cooling rack to cool completely. transfer 2 a serving platter. frost top and sides with pinapple topping. sprinkle with coconut
  • Step 3
    making the topping: pour pineapple and its juice n a med mixing bowl. stir in pudding mix. and fold cool whip and coconut. mix well and chill cake over nite .its best that way. this is what u frost the cake with
