Growing up my mother was a single mom after my dad died when I was 10. She still made us birthday cakes and I was almost grown before I knew a bakery cake existed. She used cake mixes and jazzed them up. She is in bad health now and I offered to make her birthday cake. This is the one she chose! I hope it turns out as good as hers!!

Ingredients

  • 1 box
    yellow cake mix
  • 1/2 c
    oil
  • 1 pkg
    instant lemon pudding mix
  • 4
    eggs
  • 1 c
    water
  • GLAZE

  • 1 c
    orange juice, not concentrated
  • 1 c
    sugar

How to Make Mama's "Dream Cake"

Step-by-Step

  1. Blend all cake ingredients, then beat at medium speed for 2 minutes.
  2. Bake in 10" tube or bundt pan at 350 degrees for 45 to 55 minutes.
  3. Cool cake side up for 25 minutes.
  4. Prepare glaze ingredients by heating sugar and orange juice until sugar is dissolved. Pour over warm cake and finish cooling.
  5. Invert pan onto serving plate. It will be runny so make sure your plate has a lip because of the juice. Store in refrigerator.
