I wanted to make a lower fat chocolate cake that would taste like a full fat one, lol. This comes very close to it, and the berries add a bonus in taste and in health. Calories: 152 Fat: 5 grams Carbs; 24 grams

Ingredients

  • 3/4 cup sugar
  • 1/2 cup water
  • 2 tablespoons instant coffee
  • 3 ounces semisweet chocolate, chopped
  • 2 - egg yolks
  • 1 teaspoon vanilla
  • 1/2 cup cocoa powder
  • 1/3 cup flour
  • 1/4 teaspoon baking powder
  • 5 - egg whites
  • 4 ounces lite cool whip
  • 1 cup blueberries
  • 1/2 cup blackberries

How To Make lowfat berry-mocha cake

  • Step 1
    Heat oven to 350. Spray a 9" springform pan w/ cooking spray. In saucepan stir together sugar, water and coffee. Stir over med-low heat until coffee and sugar are melted.
  • Step 2
    Stir in chopped chocolate until melted. Remove from heat. Place egg yolks in a bowl, slowly stir in chocolate mix, then stir in vanilla. In medium bowl, stir together cocoa powder, flour and baking powder. Stir in chocolate mix until smooth.
  • Step 3
    In lg bowl, beat egg whites until stiff peaks form. Stir a small amount of egg white into chocolate mix. Fold chocolate mix into remaining egg whites. Spread in pan. Bake 30 mins, or until top springs back when touched. Cool 10 mins. Loosen and remove sides of pan. Cut cake into wedges. Top each slice w/ cool whip and some berries.
