linda's coconut pound cake
This came to my Mom from her from Linda via another friend Ruthie...My mom made this for me on my birthday every year, for my brother she sub German Choc for the coconut...Yummy!!!

Ingredients
- 3 sticks butter, mom used margerine
- 3 cups sugar
- 6 - eggs
- 1 can angel flake coconut
- 3 cups sifted flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon each vanilla, lemond, and coconut extract
- 1 cup evaporated milk, or use coconut milk
- 1/4 teaspoon salt
How To Make linda's coconut pound cake

Step 1Cream butter and sugar. Add eggs one at a time, beating well after each. Sift together dry ingredients and add alternately with milk. Mix in coconut and extract.

Step 2Pour into a greased and floured tub or bundt pan. Bake at 350 for 1 hour and 5 min...might need a little longer.

Step 3Finish with your own icing or just eat plain, either way its YUMMY!!!
