lemon pudding cake
Mom got this recipe from a friend of hers whose daughter was a high school classmate of mine. Everyone fell in love with it. You can't tell the vegetable oil is in the glaze, but it really makes a difference. She has given out this recipe many times. I have been baking it for 50 years and everyone continues to love it...and I continue to give out the recipe! If you are a lemon lover then this is the cake for you.

Ingredients
- - cake:
- 1 box duncan hines lemon cake mix*
- 1 package instant lemon pudding mix
- 1/2 cup vegetable oil
- 1 cup water
- 4 large eggs
- - glaze:
- 2 cups powdered sugar
- 2 tablespoons vegetable oil
- 1/3 cup lemon juice
How To Make lemon pudding cake

Step 1Preheat oven to 350 degrees.

Step 2Stir the cake mix and instant pudding mix in the bowl of your electric mixer till the two dry ingredients are combined.

Step 3Mix in the vegetable oil, water, and eggs. Beat for 3 minutes.

Step 4Pour into a greased and floured 9 x 13-inch baking pan.

Step 5Bake in a preheated 350 degree oven for 35 to 40 minutes (start checking at 30 minutes) or until a toothpick comes out clean.

Step 6Remove from oven and have ready the confectioners' sugar, vegetable oil, and lemon juice that you have already mixed together till smooth.

Step 7Poke cake all over the top with the tines of a fork and then pour the glaze over the top. Cool cake and enjoy.

Step 8*Be sure and use a Duncan Hines Cake Mix as it does not have pudding in the mix
