Mom got this recipe from a friend of hers whose daughter was a high school classmate of mine. Everyone fell in love with it. You can't tell the vegetable oil is in the glaze, but it really makes a difference. She has given out this recipe many times. I have been baking it for 50 years and everyone continues to love it...and I continue to give out the recipe! If you are a lemon lover then this is the cake for you.

Ingredients

  • - cake:
  • 1 box duncan hines lemon cake mix*
  • 1 package instant lemon pudding mix
  • 1/2 cup vegetable oil
  • 1 cup water
  • 4 large eggs
  • - glaze:
  • 2 cups powdered sugar
  • 2 tablespoons vegetable oil
  • 1/3 cup lemon juice

How To Make lemon pudding cake

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Stir the cake mix and instant pudding mix in the bowl of your electric mixer till the two dry ingredients are combined.
  • Step 3
    Mix in the vegetable oil, water, and eggs. Beat for 3 minutes.
  • Step 4
    Pour into a greased and floured 9 x 13-inch baking pan.
  • Step 5
    Bake in a preheated 350 degree oven for 35 to 40 minutes (start checking at 30 minutes) or until a toothpick comes out clean.
  • Step 6
    Remove from oven and have ready the confectioners' sugar, vegetable oil, and lemon juice that you have already mixed together till smooth.
  • Step 7
    Poke cake all over the top with the tines of a fork and then pour the glaze over the top. Cool cake and enjoy.
  • Step 8
    *Be sure and use a Duncan Hines Cake Mix as it does not have pudding in the mix
