easy peach upside-down coffee cake
The original recipe I got from our church cookbook, it called for a homemade crust, I made it easier to make w/ the cookie crust.

Ingredients
- 1 package refrigerated sugar cookie dough
- 1/4 cup butter
- 1/3 cup light brown sugar
- 1/2 teaspoon cinnamon
- 1-1/2 teaspoon frozen, sliced peaches, like doles, thawed
- 2 teaspoons baking powder
- 2 large eggs
- 1/2 cup light cream
- 2/3 cup peach preserves
- 3 tablespoons orange juice
- 1/3 cup chopped pecans
How To Make easy peach upside-down coffee cake

Step 1Open pkg of cookie dough and let soften 5 mins. Heat oven to 350. Spray a 10" springform pan w/cooking spray. In skillet, over medium heat, melt butter. Stir in brown sugar and cinnamon. Add peaches and cook 6 mins, stirring occasionally.

Step 2Spoon mix into bottom of pan. In lg bowl, break up cookie dough w/ hands. Add baking powder and eggs, beat w/ mixer until blended. Beat in light cream until smooth.

Step 3Pour mix over peaches. Bake 40 mins. Place a plat over top of pan and flip over. Let cool. In microwave bowl, microwave presreves and orange juice. Drizzle over cake. Sprinkle w/ pecans.
