easy low-sugar banana bread
This easy recipe shows you how good healthy can taste. You don't need a mixer, I just use a fork to mix. It makes the house smell so nice, people always smile when they come in. This is my son's favourite school snack. Swiss schools do not allow unhealthy, sugary food/drinks at school. This banana bread is high on flavour, whole wheat grain and fibre, and low in sugar and fat. So this one is allowed! In moderation of course. If I make it at the weekend I add small chunks of plain white chocolate. Delish! You can add a pinch of baking powder or baking soda to make it rise a little more.

Banana bread is great for breakfast or afternoon tea and this is a very moist, tasty recipe. Bananas make the bread sweet so you don't notice that there is only a little sugar added. We added macadamia nuts to the bread and liked the crunch and coconut flavor. Dense and filling, no one will believe you when you say it's healthy.
Ingredients
- 3-4 - ripe or even overripe bananas
- 1/3 cup warm and soft or melted butter or plain Greek yogurt(75 g)
- 1/8 cup cane sugar (or sugar of your choice)
- 1 large egg, beaten
- 1 1/2 cups whole wheat flour (I like spelt)
- 1/2 cup hazelnuts/pecan nuts/macadamia nuts/pumpkin seeds (your choice)
- 1 pinch salt
How To Make easy low-sugar banana bread

Step 1Preheat the oven to 350°F (175°C). Mash the bananas in a large bowl.

Step 2Beat the egg briefly in a small bowl.

Step 3Add the egg, salt, and soft butter to bananas. Combine (brief, not too precise).

Step 4Add the flour, sugar, (baking soda/powder), nuts/seeds. Combine (brief, not too precise).

Step 5Butter and flour the ring mould, tin or whatever you use.

Step 6Put the mix in the tin.

Step 7Bake in the oven for 1 hour. Enjoy!
