dave's favorite fruit cake
I never had a fruit cake until my husband made this for me. Ever since I tried it it has been my all time favorite cake. The hint of mixed spice with the fruit is to die for. I hope you enjoy my husband cake as much as I do.

Ingredients
- 300 grams self rising flour
- 110 grams butter
- 110 grams caster sugar
- 250 grams mixed dried fruit, inc. cherries if desired
- 1 - egg
- 5 tablespoons milk
- 1 teaspoon mixed spices, optional
How To Make dave's favorite fruit cake

Step 1Preheat oven to 180c. Line 6" round cake tin. Soak dried fruit in boiling water.

Step 2Rub butter into flour until it resembles fine breadcrumbs. Drain fruit and add sugar and fruit to flour mixture. Add mixed spices, if using.

Step 3Add egg and milk to make a soft dropping consistency. Pour into cake tin and sprinkle to with Demerara, course brown sugar, pat down with spoon (for making a crunchy top)

Step 4Bake 45-50 minutes or until skewer comes out clean. Cool 5 minutes on rack then remove from cake tin.
