I never had a fruit cake until my husband made this for me. Ever since I tried it it has been my all time favorite cake. The hint of mixed spice with the fruit is to die for. I hope you enjoy my husband cake as much as I do.

Ingredients For dave's favorite fruit cake

  • 300 g
    self rising flour
  • 110 g
    butter
  • 110 g
    caster sugar
  • 250 g
    mixed dried fruit, inc. cherries if desired
  • 1
    egg
  • 5 Tbsp
    milk
  • 1 tsp
    mixed spices, optional

How To Make dave's favorite fruit cake

    Preheat oven to 180c. Line 6" round cake tin. Soak dried fruit in boiling water.

    Rub butter into flour until it resembles fine breadcrumbs. Drain fruit and add sugar and fruit to flour mixture. Add mixed spices, if using.

    Add egg and milk to make a soft dropping consistency. Pour into cake tin and sprinkle to with Demerara, course brown sugar, pat down with spoon (for making a crunchy top)

    Bake 45-50 minutes or until skewer comes out clean. Cool 5 minutes on rack then remove from cake tin.
