How to Make Dave's Favorite Fruit Cake
- Preheat oven to 180c. Line 6" round cake tin. Soak dried fruit in boiling water.
- Rub butter into flour until it resembles fine breadcrumbs. Drain fruit and add sugar and fruit to flour mixture. Add mixed spices, if using.
- Add egg and milk to make a soft dropping consistency. Pour into cake tin and sprinkle to with Demerara, course brown sugar, pat down with spoon (for making a crunchy top)
- Bake 45-50 minutes or until skewer comes out clean. Cool 5 minutes on rack then remove from cake tin.
