chocolate ice box cake ( 6 layers )

I made this for our Labor Day Cook Out. Almost didn't get a picture as this is the last piece. Needles to say it went over big. I think my next try will be with peach's. I think I'm in love with these Ice Box Cakes. My family and friends love them too. They are so easy to make. NOTE: You can use Short Bread Cookies, Sugar Cookies, or Chocolate Chip if you don't want to bake. Just make sure you let it set over night.

Ingredients

  • CAKE
  • 1 box yellow cake mix ( chocolate )i like duncan hines
  • 3 medium eggs
  • 1 cup water
  • 1/3 cup oil
  • 1/2 cup sour cream
  • ICING
  • 12 ounces cream cheese ( room temp. )
  • 1 stick butter ( room temp. )
  • 1 1/2 cups powder sugar
  • 6 tablespoons cocoa
  • 3 cups heavy cream
  • 2 teaspoons vanilla extract

How To Make chocolate ice box cake ( 6 layers )

  • Step 1
    2 8 or 9 in" cake pans. Grease and flour pans.
  • Step 2
    Preheat oven on 350 degrees
  • Step 3
    Mix cake with all ingredients. Pour into cake pans.
  • Step 4
    Bake for 20 or 25 min. Or until done.
  • Step 5
    While cake bakes, in large bowl mix cream cheese, butter, cocoa, powder sugar, heavy cream, and vanilla until thick and you have stiff peaks.
  • Step 6
    When cakes are cooled, cut each layer into 3 thin layers.
  • Step 7
    Put your first cake layer on cake plate, then spread on a layer of icing, using equal amounts of icing on each layer. End with icing on top, cover and refrigerate 8 hrs. Or overnight.
