Ingredients

1 c
almond milk
1 tsp
apple cider vinegar
1 c
flour
1/3 c
cocoa powder
3/4 tsp
baking soda
1/2 tsp
baking powder
1/3 c
canola oil
3/4 c
granulated sugar
11/4 tsp
vanilla

Step-By-Step

1Preheat oven to 350 degrees and line muffin tin with cupcake liners.
2Whisk almond milk and vinegar in a measuring cup and set aside a few minutes to curdle.
3Beat together milk, oil, sugar and vanilla. Sift in flour, cocoa powder, bakinf powder and baking soda and mix until there are no lumps.
4Fill cupcakes two-thirds of the way and bake for 18 to 20 minutes. Transfer to cooling racks and let cool before frosting.
