It took me years to become a good cook. Many suffered under my well meaning efforts. I proudly say no one, to my knowledge, became ill no matter what I concocted or how miserably I failed. My dad was my 'Go to Guy' for trying anything I plated and served. I can still see his smiling gulps of despair, shaking his head, as he tried to get the next bit down. What a trooper! He loved a good cake, I miss him dearly but I know he'd be proud of me now. Here is another recipe from my parents ziplock bag of treasures. Enjoy~

Ingredients For chocolate-almond cake

  • 2 c
    sugar
  • 2 stick
    butter, softened
  • 1 tsp
    vanilla
  • 3/4 tsp
    almond extract
  • 2
    eggs
  • 2 1/2 c
    cake flour
  • 1 c
    cocoa powder
  • 3 tsp
    baking soda
  • 1/2 tsp
    salt
  • butter cream frosting, recipe below
  • sliced almonds
  • BUTTER CREAM FROSTING
  • 6 c
    powdered sugar
  • 2 stick
    butter, softened
  • 3 Tbsp
    milk
  • 1 1/2 tsp
    vanilla
  • 3/4 tsp
    almond extract

How To Make chocolate-almond cake

    Heat oven 350 degrees. Grease and flour 3 - 9 in cake pans.

    In a large bowl, whisk together all dry cake ingredients and set aside. Beat sugar, butter, vanilla and almond extract in large bowl on medium speed until fluffy. Beat in eggs, one at a time. Turn mixer speed to medium low and add dry ingredients alternately with buttermilk in four batches. When all ingredients are added, beat on med speed for another minute.

    Evenly divide batter into prepared cake pans and bake 30-35 minutes or until toothpick comes out clean. Cool for 10 min in pans. Remove from pans and cool completely before frosting.

    BUTTER CREAM FROSTING

    Beat all ingredients on med high speed until incorporated, making sure to scrape down sides as you go.

    When cake is completely cool. Add a dollop of frosting to bottom of cake dish to stop cake from sliding around while you're frosting. Enjoy~
