Got this recipe from an old newspaper published April 24th, 1914 - I do genealogy on the side so I'm always looking through old newspapers for stuff. Anyhoo, I used extra nutmeg because the store didn't have mace. I also used the medium sized eggs from my Silkie chickens because I figured that back in the old timey-times the eggs would have been smaller, not these extra-large things you get at the grocery store today. I guessed 350 for 15-20 min. and it tastes pretty darn good with some 10X sprinkled over the top.

Ingredients

  • 1/4 cup - unsalted butter
  • 1/2 cup - granulated sugar
  • 2 - egg yolks
  • 1/3 cup - molasses
  • 1 1/2 cups - flour
  • 1/4 cup - unsweetened cocoa
  • 1/2 tsp - baking soda
  • 1 tsp - cream of tartar
  • 1 tsp - cinnamon
  • 1 tsp - mace
  • 1/2 tsp - nutmeg
  • 1/4 tsp - clove, ground
  • 1/2 cup - cold black coffee
  • 2 - egg whites

How To Make brown spice cake

  • Step 1
    This is exactly how it was written in the paper: Cream one-quarter cup butter, add gradually one-half cup sugar, the beaten yolks ot two eggs and one-third cup molasses, sift together one and one half cups flour, one-fourth cup cocoa, one-half teaspoonful soda, one teaspoonful cream ot tartar, one teaepoonful each of cinnamon and mace, one-half teaspoonful nutmeg, one fourth of clove; add flour to the creamed mixture alternately with one half cup cold black coffee. Last fold In the whites of the eggs beaten until dry.
