Ingredients
- 4 - eggs
- 2 cups sugar
- 2 cups canola oil
- 2 teaspoons vanilla
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon allspice, ground
- 1/2 teaspoon salt
- 3 cups shredded, peeled, sweet potatoes ( about 2 med)
- 1 cup walnuts,chopped
- - frosting:
- 1 package 8oz. cream cheese
- 1/2 cup butter, softened
- 1 teaspoon vanilla
- 2 cups confectioners' sugar

Step 1Preheat oven to 350* Grease a 9x13 inch pan.

Step 2In a large mixing bowl, beat eggs, sugar, oil and vanilla until well blended. In another bowl, whisk flour, baking soda, salt, and spices; gradually beat into egg mixture. Stir in sweet potatoes and walnuts

Step 3Transfer to a prepared pan. Bake 40-50 minutes or until a toothpick inserted into the center comes out clean. Cool completely in the pan on a wire rack.

Step 4In a small bowl, beat cream cheese, butter and vanilla until well blended, add in the confectioner's sugar beating well until smooth, Spread over cooled cake... and refrigerate. Enjoy!
