banana walnut bread pudding with caramel glaze

This bread pudding came to fruition because of my sweet tooth, a box of banana nut muffin mix, some seriously overripe bananas and cleaning out my fridge, (lots of stale bread. Came out yummy, I hope you enjoy.

Ingredients

  • 1 box banana nut muffin mix
  • 12 slices stale bread, torn
  • 1 1/2 cups sugar
  • 1 teaspoon freshly grated nutmeg
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • - pinch of salt
  • 3 large eggs
  • 3 medium overripe bananas, my skins were black
  • 2 cups milk, i used 2%
  • 1 stick melted butter
  • CARAMEL GLAZE
  • 1 - 14 oz can milnot sweeten condensed milk

How To Make banana walnut bread pudding with caramel glaze

  • Step 1
    Preheat oven to 350 degrees. Gather ingredients, large mixing bowl, and 13x9 pyrex dish.
  • Step 2
    Empty box muffin mix and all dry ingredients into mixing bowl. Then add wet ingredients mixing well. I let batter rest 10 minutes.
  • Step 3
    Pour batter into buttered 13x9 baking dish. Bake for 35-40 minutes, or until you see batter pulling away from sides of dish.
  • Step 4
    Heat milnot over medium heat stirring frequently until it turns to caramel.
  • Step 5
    Remove breadpudding from oven and while still warm pour caramel over top a little at a time, allowing it to soak in. I did mine ,using a plastic glove, and gently massaged it in with my fingers until it was at the consistency I wanted.
