awesome paleo fruited cake

This recipe is based on a recipe I found on Elana's Pantry. As always, I had to change it up a bit (I have a sweet tooth). I eat this for breakfast with a cup of coffee, or anytime I need a snack! All the ingredients, I bought at Trader Joe's with the exception of the apple pie spice.

Ingredients

  • 1/2 cup almond butter, creamy
  • 2 large eggs, i use brown, extra large is ok to use also
  • 2 tablespoons organic coconut sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon baking soda
  • 1 tablespoon apple pie spice
  • 1/4 cup dried cranberries
  • 1/4 cup raisins, golden or black
  • 1/4 cup dried apricots , finely chopped
  • 1/4 cup unsweetened coconut flakes

How To Make awesome paleo fruited cake

  • Step 1
    In a large mixing bowl, wisk the almond butter until it is nice & creamy. You can use a hand mixer if your want.
  • Step 2
    Add the eggs and vanilla extract, mix until incorporated.
  • Step 3
    Add the coconut sugar, salt, baking soda and apple pie spice, mix until incorporated.
  • Step 4
    Add the dried fruit to the mixture. Stir until all ingredients are combined. The batter will be thick.
  • Step 5
    Grease a 8x8 inch baking pan well with palm shortening or coconut oil
  • Step 6
    Pour batter into greased pan and spread evenly
  • Step 7
    Bake at 325 degrees for 15-17 minutes
  • Step 8
    Cool in pan for 10 minutes, cut and serve
  • Step 9
    Enjoy!

    Refrigerate any leftovers
