Awesome Paleo Fruited Cake

This recipe is based on a recipe I found on Elana's Pantry. As always, I had to change it up a bit (I have a sweet tooth). I eat this for breakfast with a cup of coffee, or anytime I need a snack!

All the ingredients, I bought at Trader Joe's with the exception of the apple pie spice.

  • 1/2 c
    almond butter, creamy
  • 2 large
    eggs, i use brown, extra large is ok to use also
  • 2 Tbsp
    organic coconut sugar
  • 1 1/2 tsp
    pure vanilla extract
  • 1/4 tsp
    sea salt
  • 1/4 tsp
    baking soda
  • 1 Tbsp
    apple pie spice
  • 1/4 c
    dried cranberries
  • 1/4 c
    raisins, golden or black
  • 1/4 c
    dried apricots , finely chopped
  • 1/4 c
    unsweetened coconut flakes

How to Make Awesome Paleo Fruited Cake


  1. In a large mixing bowl, wisk the almond butter until it is nice & creamy. You can use a hand mixer if your want.
  2. Add the eggs and vanilla extract, mix until incorporated.
  3. Add the coconut sugar, salt, baking soda and apple pie spice, mix until incorporated.
  4. Add the dried fruit to the mixture. Stir until all ingredients are combined. The batter will be thick.
  5. Grease a 8x8 inch baking pan well with palm shortening or coconut oil
  6. Pour batter into greased pan and spread evenly
  7. Bake at 325 degrees for 15-17 minutes
  8. Cool in pan for 10 minutes, cut and serve
  9. Enjoy!
  10. Refrigerate any leftovers
