This is a lovely cake that is perfect for breakfast with a cup of coffee or as a dessert for the apple lover in your life. I made it just a little healthier so I wouldn't have to feel guilty about its decadence!

Ingredients
- FILLING:
- 2 cups apples, peeled and diced small
- 1/4 cup sugar
- 1/2 teaspoon cinnamon, ground
- 1/8 teaspoon freshly grated nutmeg
- 1/8 teaspoon cardamon, ground
- 2 tablespoons water
- 2 tablespoons cornstarch
- TOPPING:
- 1/2 cup dark brown sugar, frimly packed
- 1/2 teaspoon cinnamon, ground
- 1/2 cup chopped walnuts, optional
- CAKE:
- 1/3 cup butter, softened (room temp)
- 3/4 cup sugar
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla (danish pastry extract if you can find it)
- 1/3 cup liquid egg substitute
- 2 1/4 cups flour
- 2 tablespoons fresh ground flaxseed
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon, ground
- 1/4 teaspoon cardamom, ground
- 1 cup low-fat greek yogurt
- GLAZE:
- 1 1/2 cups powdered sugar
- 4 tablespoons low-fat evaporated milk (enough to get desired consistency)
- 1 teaspoon vanilla (danish pastry extract if you can find it)
- 1/8 teaspoon nutmeg, fresh grated
- 1/8 teaspoon cardamom, ground
How To Make apple fritter cake

Step 1Filling: In a saucepan, combine apples, sugar, cinnamon, nutmeg, cardamom, water, and cornstarch. Over medium heat, cook for about 5 minutes or until apples are softened and liquid thickens. Set aside.

Step 2Topping: In a small bowl, combine brown sugar, cinnamon and nuts (if desired.) Set aside.

Step 3Preheat oven to 350 degrees F. Lightly spray a 13x9 glass baking dish with nonstick spray.

Step 4In a bowl, beat softened butter and sugar for about 3 minutes until fluffy. Blend in applesauce, vanilla, and egg substitute until combined.

Step 5In a separate bowl, combine flour, ground flax, baking powder, baking soda, salt, cinnamon, and cardamom.

Step 6Alternating, fold flour mixture and then yogurt into egg mixture, repeat; blend just until combined.

Step 7Spread half of the cake batter into bottom of prepared dish. Top with apple filling, spreading evenly over batter. Sprinkle half of the topping mixture over filling. Cover with remaining cake batter and then sprinkle remaining topping over that.

Step 8Bake in preheated oven for about 35 minutes or until cake tests done.

Step 9Glaze: In a small bowl, blend together powdered sugar, evaporated milk, vanilla, nutmeg, and cardamom. When cake is done, immediately poke a few holes and pour glaze over top of warm cake, covering completely. Allow to cool until glaze is set (about 20 minutes.)
