This is another one of my Grandma's delicious recipes. These are very moist and tasty cookies , I frost them every once in awhile but most of the time I like them plain.

Ingredients

  • CREAM TOGETHER :

  • 2 c
    sugar
  • 1 c
    vegetable oil
  • 3 large
    eggs
  • 2 c
    grated zucchini
  • 2 Tbsp
    concentrated orange juice ; optional
  • 2 Tbsp
    vanilla if you don't use the juice.
  • SIFT TOGETHER :

  • 4 c
    flour
  • 1/2 tsp
    baking powders
  • 1 tsp
    baking soda
  • 2 tsp
    cinnamon
  • 1/2 tsp
    ground nutmeg
  • 1/2 tsp
    ground cloves ; optional (i leave it out)
  • OPTIONAL INGREDIENTS :

  • 1 c
    chopped walnuts
  • 1 c
    chopped dates or raisins

How to Make Zucchini Cookies

Step-by-Step

  1. Blend all the above together and add : chopped Nuts & Raisins or Dates
  2. Drop by the teaspoon full on a cookie sheet .
  3. Place in a Pre-heated oven @ 375° for 12 - 15 minutes .
  4. Note : these cookies freeze very well.
