Ingredients For zucchini cookies

1 cbutter, at room temperature

1 1/2 csugar

2large eggs
-
1 tspvanilla extract

2 cgrated zucchini

2 3/4 call purpose flour

2 tspbaking powder

1 tspground cinnamon

1 tspsalt

1 cwalnuts, chopped

1 csemi-sweet chocolate chips

1/2 cgolden raisins

1 csweetened flaked coconut
How To Make zucchini cookies

1Preheat oven to 350* In a large bowl, cream together butter and sugar until light and fluffy. Beat in egga and vanilla. Stir in zucchini.

2In a medium bowl, whisk together flour, baking powder, cinnamon and salt. Add to zucchini mixture. Stir in nuts, chocolate chips, raisins and coconut.

3Drop by tablespoons onto buttered cookie sheets. Bake until lightlybrowned, about 15-20 minutes transfer to a rack to cool. Repeatwith remaining dough.
