You can't taste the zucchini in these cookies, but it adds vitamins and fiber with a moist yummy favor....plus you know that the kids are eating their veggies, lol

Ingredients

butter, at room temperature
1 1/2 c
sugar
2
large eggs
1 tsp
vanilla extract
2 c
grated zucchini
2 3/4 c
all purpose flour
2 tsp
baking powder
1 tsp
ground cinnamon
1 tsp
salt
1 c
walnuts, chopped
1 c
semi-sweet chocolate chips
1/2 c
golden raisins
1 c
sweetened flaked coconut

How to Make Zucchini Cookies

Step-by-Step

  • 1Preheat oven to 350*
    In a large bowl, cream together butter and sugar until light and fluffy. Beat in egga and vanilla. Stir in zucchini.
  • 2In a medium bowl, whisk together flour, baking powder, cinnamon and salt. Add to zucchini mixture. Stir in nuts, chocolate chips, raisins and coconut.
  • 3Drop by tablespoons onto buttered cookie sheets.
    Bake until lightlybrowned, about 15-20 minutes
    transfer to a rack to cool.
    Repeatwith remaining dough.
