white chocolate peppermint crunch cookies
This is my new addition to my yearly Christmas cookie ritual. This cookie was born out of pleasing my husband and my friend Tanya, my husband loves his chewy moist chocolate chip cookies and my friend Tanya doesn't like chocolate but loves white chocolate; she bought peppermint crunch baking chips and asked me to bake her some cookies and I decided to comebine both of their favorites into this fabulous cookie.

Ingredients
- 2 sticks unsalted butter
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar
- 1 teaspoon vanilla extract, optional
- 2 - eggs
- 2 1/4 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 package instant white chocolate pudding, small box
- 1 package (10oz.) andes peppermint crunch baking chips
How To Make white chocolate peppermint crunch cookies

Step 1Cream together margarine, sugars, eggs and vanilla.

Step 2Add 1 1/2 cups flour, pudding mix, salt and baking soda and stir well. Then add last 3/4 cup flour, stir until combined.

Step 3Fold in Peppermint Crunch baking chips.

Step 4Bake at 375 degrees for 9-11 minutes on center rack of oven.

Step 5Cool on baking sheet 2 minutes; remove to wire rack to cool completely.
