White Chocolate Chip Cranberry Cookies Recipe

This recipe was in "Our State" magazine for December 2015. I used some packaged Quaker instant oatmeal that I had in my kitchen. I used two packages of original and one package of apple and cranberry oatmeal. I also used canola oil instead of vegetable oil. My husband and I thought they had a good flavor.

(2 sticks) salted butter, softened
1 c
white sugar
1 c
light brown sugar
1 tsp
pure vanilla extract
1 tsp
orange extract
1 c
vegetable oil
4 c
all-purpose flour
1 c
crushed cornflakes
1 c
quick-cooking oatmeal
1 Tbsp
baking powder
1/2 tsp
1 c
white chocolate chips
1 c
sliced almonds
1 c
dried cranberries

How to Make White Chocolate Chip Cranberry Cookies


  • 1Preheat oven to 325 degrees. In a mixing bowl, cream together butter, sugars, and vanilla and orange extracts. Add egg and mix. Add oil and stir
  • 2In a separate bowl, mix flour, corn flakes, oatmeal, baking soda, and salt. Add to batter. Stir in white chocolate chips, almonds, and cranberries.
  • 3Form dough into 1-inch balls. Place on cookies hseet, and flatten with a fork dipped in water. Bake for 10 to 12 minutes. Remove cookie sheet from oven, and let sit for 2 minutes. Transfer cookies to a wire rack to cool.
