This recipe was in "Our State" magazine for December 2015. I used some packaged Quaker instant oatmeal that I had in my kitchen. I used two packages of original and one package of apple and cranberry oatmeal. I also used canola oil instead of vegetable oil. My husband and I thought they had a good flavor.

Ingredients

  • 8 oz
    (2 sticks) salted butter, softened
  • 1 c
    white sugar
  • 1 c
    light brown sugar
  • 1 tsp
    pure vanilla extract
  • 1 tsp
    orange extract
  • 1
    egg
  • 1 c
    vegetable oil
  • 4 c
    all-purpose flour
  • 1 c
    crushed cornflakes
  • 1 c
    quick-cooking oatmeal
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    white chocolate chips
  • 1 c
    sliced almonds
  • 1 c
    dried cranberries

How to Make White Chocolate Chip Cranberry Cookies

Step-by-Step

  1. Preheat oven to 325 degrees. In a mixing bowl, cream together butter, sugars, and vanilla and orange extracts. Add egg and mix. Add oil and stir
  2. In a separate bowl, mix flour, corn flakes, oatmeal, baking soda, and salt. Add to batter. Stir in white chocolate chips, almonds, and cranberries.
  3. Form dough into 1-inch balls. Place on cookies hseet, and flatten with a fork dipped in water. Bake for 10 to 12 minutes. Remove cookie sheet from oven, and let sit for 2 minutes. Transfer cookies to a wire rack to cool.
