unbelievable low(ish)-cal chocolate pecan pie bars

These are soooo amazing, decadent and addictive that you won't believe that they are not 500 calroies each! Just make sure you stick to one or two..but I bet you won't be able to! I made these for my (now-ex) boyfriend and he was in HEAVEN with them. ACtually asked me recently, in these words..."I know I don't deserve it, but maybe you could make me those pecan bars you made that time, maybe for my birthday next month???" HAHAHA!!! I got this recipe from A Taste of Home's Comfort Food Diet magazine, but I tweaked it a bit to make it even more low-cal when I made it. I'll mention both.

Ingredients

  • CRUST
  • 1 1/2 cups all-purpose flour (i may have used whole wheat or a combination)
  • 1/2 cup packed brown sugar (i used splenda brown sugar blend)
  • 1/2 cup cold butter, cubed (could use a lower cal/lower fat substitute)
  • FILLING/TOP
  • 3 - eggs
  • 3/4 cup sugar (could try with sugar sub...i went with regular)
  • 3/4 cup dark corn syrup
  • 2 tablespoons butter, melted (again, could use lower-cal/lower fat sub)
  • 1 teaspoon vanilla extract
  • 1 3/4 cups semisweet chocolate chunks (could use cacao if you really wanted to...but nah!)
  • 1 1/2 cups coarsely chopped pecans

How To Make unbelievable low(ish)-cal chocolate pecan pie bars

  • Step 1
    In a small bowl, combine the flour and brown sugar; cut in butter until crumbly. Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 10-15 minutes or until golden brown.
  • Step 2
    Meanwhile, in a large bowl, whisk the eggs, sugar, corn syrup, butter and vanilla until blended. Stir in chocolate chunks and pecans. Pour over crust.
  • Step 3
    Bake for 20-25 minutes or until set. Cool completely on a wire rack. Cut into bars. Store in an airtight container in the refrigerator.
  • Step 4
    Yield: about 3 dozen. Nutritional Analysis (Based on cutting into 3 dozen bars): 1 bar equals 176 calories, 5 g fat (2 g saturated fat), 13 mg cholesterol, 25 mg sodium, 11 g carbohydrate, 1 g fiber, 1 g protein.
  • Step 5
    If you are less concerned with the calories, I found a similar recipe that added a chocolate drizzle to the bars. These are the ingredients and instructions, although that recipe says it yeilds 4 dozen so you may end up having some extra chocolate. Which, to me, would not be considered a problem! haha Save it and warm up to drizzle over ice cream, or dip fruit, pretzels, nuts..whatever!...into it! DRIZZLE/GLAZE: •4 ounces semisweet chocolate, chopped •1-1/4 teaspoons shortening In a microwave, melt chocolate and shortening; stir until smooth. Drizzle over bars.
