ugly cherry oatmeal no bake cookies

I had a thought this morning! No bake cookies with no chocolate, I know, almost a sin right? Well bare with me, please. I added a little extra butter, just seemed the likely thing to do, to make up for the lack of chocolate. lol Added some coconut and best of all, dried cherries! When it all came together...I thought WOW this is so yummy I just have to share! I know, it's not the most appealing cookie to look at, but the flavor makes up for it! Trust me! :O)

Ingredients

  • 1 cup *dried cherries, slighty chopped
  • 1 cup water
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 cup brown sugar
  • 1 cup sugar
  • 1/2 cup peanut butter, smooth works best
  • 1 teaspoon vanilla
  • 1 pinch salt
  • 2 1/2 cups oatmeal, quick kind works best
  • 1 - 1 1/2 cups coconut

How To Make ugly cherry oatmeal no bake cookies

  • Step 1
    In a 2 c glass measuring cup or a small glass bowl, add cherries and water, microwave 2 minutes. Allow to stand in water 15 minutes. Drain and set aside. While waiting 15 minutes, line your counter top with wax paper and get your other ingredients ready to go.
  • Step 2
    In a large saucepan, over medium heat add butter, milk and sugars. Stir almost constantly until mixture begins to boil. Once it comes to boil, (do not allow to come to a rolling boil) remove from heat, stir in peanut butter, vanilla, salt, oatmeal, coconut and cherries until well combined.
  • Step 3
    Using a medium to large cookie scoop, or a couple tablespoons, drop cookies onto wax paper. Allow to set up then enjoy! :o)
  • Step 4
    ***I find it easier to chop the cherries after they are hydrated, but you may prefer it before.
