These are light and soft cookies that are not overly sweet.

If you grew up in the South at some point in your life you've had a tea cake. Whether Grandma gave them to you with a glass of milk or you had them after a luncheon with a cup of tea, they have a very slight vanilla flavor. These are cookies, similar to a sugar cookie, not cakes as the name suggests.  What makes them different than a sugar cookie, though, is their softer cake-like texture.

Ingredients

  • 1 cup shortening
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt

How To Make tea cakes, grandma style

  • Cream shortening, eggs, sugar, and vanilla.
    Step 1
    Cream shortening, sugar, eggs, and vanilla extract. Mix until smooth.
  • Whisk flour, baking powder, and salt.
    Step 2
    Whisk together the flour, baking powder, and salt in a small bowl.
  • Combine flour mixture and creamed mixture.
    Step 3
    Add the flour mixture to the creamed mixture, a little at a time, mixing as you go.
  • Roll out the chilled dough and cut into shapes.
    Step 4
    Chill the dough for 30 minutes. Preheat the oven to 350 degrees F. After 30 minutes, take about half of the dough and roll it out on a well-floured surface to about 1/4 inch thick. Cut into desired shapes.
  • Place on a parchment paper lined baking sheet.
    Step 5
    Place on a parchment paper lined baking sheet about 1 inch apart.
  • Bake for 8 - 10 minutes.
    Step 6
    Bake for 8 - 10 minutes or until slightly golden around the edges.
