These cookies were a hit at my husbands job they loved them my sister and child loved them also found this recipe on the net looking for something different I found it.

Ingredients

2 c
all purpose flour
1 tsp
baking powder
1 tsp
cinnamon
1/2 tsp
salt
1 tsp
baking soda
1/2 c
melted coconut oil, grapeseed oil, or other neutral tasting oil
1 c
sweet potato puree
1 c
dark brn. sugar
1 tsp
vanilla
2 Tbsp
maple syrup or molasses

How to Make Sweet Potato Cookies

Step-by-Step

  • 1In medium bowl combine flour, baking powder, soda, cinnamon, and salt set aside. In a large mixing bowl mix oil, sweet potato, sugar, and maple syrup and vanilla until well combined. Slowly add the flour mixture the dough will be sticky. for best results and better manageability, chill the dough for at least 30 min to an hour. If using the coconut oil. Drop by tspful on cookie sheet. Bake for 10 to 14 min or until golden brown at 350.
  • 2molasses wasn't in the original recipe I added that it made the cookies very soft note this recipe does not have any dairy in it for those who have allergies very good love these cookies hope you do too.
