swedish coconut butter cookies
For an extra special treat, toast the flaked coconut before you use it in this recipe. These delicious cookies melt in your mouth. I've been making them for years, I hope you enjoy them as much as we do. I dare you to only eat one. I bet you can't, these lovely cookies are addictive. This recipe is from my old Land O’Lakes cookbook.

Ingredients
- 3 1/2 cups all-purpose flour
- 2 cups sugar
- 2 cups butter, softened
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 1/2 cups flaked coconut, toasted
How To Make swedish coconut butter cookies

Step 1In large bowl, combine, flour, sugar, butter, baking powder, baking soda and vanilla. Beat mixture until well blended on low for (3-4 minutes).

Step 2Stir in coconut, until well blended. Then divide the cookie dough into halves, shape into a roll 12 x 2. Wrap the roll in wax paper, and refrigerate until firm about (2 hours).

Step 3Meanwhile preheat your oven to 350°

Step 4Take rolls out of fridge and cut into 1/4" to 1/2" slices.

Step 5Place 2-inches apart on an ungreased cookie sheet and bake for 9-14 minutes..

Step 6Cool slightly, then remove from pan and enjoy.
