soft zucchini cookies
I got this from my friend, Janet Lund, whom I worked with at NAC in Salt Lake City, Utah. She brought them to work one day and I fell in love with them and asked for the recipe. I made them again a few months ago and fell back in love with them. They are very soft and they kind of sneak up on you... eating one, then another, because after you have one, you just want another one!! Enjoy

Ingredients
- CREAM TOGETHER IN A BOWL:
- 1 cup sugar
- 1/2 cup softened butter
- 1 - beaten egg
- SIFT DRY INGREDIENTS
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cloves
- 1 teaspoon cinnamon
- ADD:
- 1 cup grated zucchini
- 1 cup raisins
- 1/2 cup chopped walnuts
How To Make soft zucchini cookies

Step 1CREAM sugar, butter, & egg till creamy

Step 2SIFT dry ingredients together and add to mixture

Step 3ADD zucchini, raisins, nuts; blend well

Step 4DROP by rounded teaspoonfuls on greased cookie sheet

Step 5BAKE 375 F for 12-25 min or until done

Step 6DON'T OVER BAKE -- These are soft cookies

Step 7In searching for just the right picture for these, I did not really find one that is exact. And I noticed that other people add chocolate chips and oatmeal to their recipes. I think they are perfect the way they are. I don't think those things are needed, but that is up the individual. Enjoy!
