soft sugar cookies with fluffy lemon frosting

It has become a tradition in my house to make these special frosted sugar cookies during Holidays. They are my family's favorite.

Ingredients

  • COOKIES:
  • 2 sticks margarine
  • 1 cup crisco
  • 1 cup powdered sugar
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon pure vanilla or lemon extract if you like more lemon
  • 2 - eggs -beaten
  • 4 cups flour
  • 1 teaspoon cream of tartar
  • LEMON FROSTING
  • 8 ounces softened cream cheese
  • 1 cup powdered sugar
  • 1-2 teaspoon lemon juice
  • 1 cup heavy whipping cream

How To Make soft sugar cookies with fluffy lemon frosting

  • Step 1
    In standing mixer, cream margarine, crisco, eggs, vanilla, and sugars. (sub lemon extract if you want more lemon flavor) In separate bowl; sift flour, soda, and cream of tartar.
  • Step 2
    Gradually add dry ingredients to creamed and mix until soft dough forms. Roll into 1" balls and place onto ungreased cookie sheet.(I use stonewear, as it bakes more evenly)
  • Step 3
    Bake cookies in 350 degree oven for approx 7-9 minutes. This will vary according to your oven. Do NOT let them brown. I generally pull them out as soon as the edges start turning a light golden color. Cool before removing from cookie sheet.
  • Step 4
    For frosting; Beat cream cheese, powdered sugar, and lemon juice until fluffy. If you choose to use food coloring, add it here. In separate chilled bowl, beat heavy cream until stiff peaks form. Fold in to cream cheese mixture until well blended. Refrigerate approx 1 hour before frosting cookies. Top with sprinkles if you desire. Makes 4 dozen.
