The first time I ever made a Prune cake, My family thought I had lost my mind. It is know a most requested cake.
This is my rendition of the cake in biscuit form. This is not a sweet one, and is great with coffee or tea. Tell me what you think.

Ingredients

Add to Grocery List

  • SET OVEN TO 350 F

  • 1 stick
    butter, room temperature
  • 1 c
    sugar
  • 1 Tbsp
    vanilla extract
  • 1 large
    egg
  • 1 c
    prunes, pitted and finley choped
  • 1 c
    walnuts chopped
  • ADD ALL THE FOLOWING INGREDIENTS IN MEDIUM BOWL

  • 2 c
    all purpose flour
  • 1/2 tsp
    salt
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    cinnamon, ground
  • 1/2 tsp
    allspice, ground
  • 1/2 tsp
    clove, ground
  • GLAZE: 1 C. POWDERED SUGAR, 1 TEASPOON MILK, 1 TEASPOON MELTED BUTTER, 1 DASH OF VANILLA MIX IN BOWL UNTIL SMOOTH. TOP EACH COOKIE (OPTIONAL)

How to Make Soft Plum Spice Cookie/Biscuit

Step-by-Step

  1. Gather all pre-measured ingredients.
  2. Combine flour, baking soda, baking powder, salt, allspice, clove and cinnamon in medium bowl
  3. Beat sugar and butter in large bowl until well blended. Beat in Vanilla and egg until smooth.
  4. Add Prunes and Nuts
  5. Beat in flour mixture (gradually) DoNot Over Mix, just until blended.
    Mixture will pull from side of bowl. STOP MIXING
  6. Use small icecream scoop or rounded spoonfuls on to sprayed cookie sheet. lightly flatten cookie before baking.
  7. cook for 7 min. edges should look golden.

    * the longer the cookies seat after cooling, the softer they become. Go figure !
