I have been asked for a few diabetic Friendly Recipes. Here is one that I get rave reviews, as they you don't feel so Deprived. These are good and Healthy. Feel free to add peanut butter Chips, Mint Choc Chips, or nuts like sliced almonds and pecans, or walnuts also. Note: one cookie has (g)12 carbs and 82 calories. (g)7 sugar I found this in a diabetic magazine. Makes about 60 cookies 2 1/2" size

Ingredients

  • (DIABETIC FRIENDLY) SOFT CHOC CHIP COOKIES
  • 1 C - rolled oats
  • 1/2 C - butter, softened
  • 1 C - brown sugar packed
  • 1 tsp - soda
  • 1/4 tsp - salt
  • 1 (8oz) - container plain yogurt
  • 2 - eggs
  • 1 1/2 tsp - vanilla extract
  • 2 1/2 C - flour
  • 2 C - semi sweet choc chips (12 oz)

How To Make soft chocolate chip cookie by freda

  • Step 1
    Preheat Oven @ 375. Bake oats in a shallow pan for 10 min. @ 375 until toasted. stir well once, during toasting. Place oats in a food processor, or blender, til ground, and set aside.
  • Step 2
    Lets make Cookies; in a mixing bowl, beat Butter, Add brn sugar,soda, & salt.Beat til mixed well. Add eggs yogurt, and vanilla beat til mixed well. Beat in as much flour as you can blend with the mixer.
  • Step 3
    stir in with a wooden spoon the Oats, and any remaining flour. Stir in Choc Chips.
  • Step 4
    Drop by rounded teaspoon, 2" apart on ungreased baking sheet.
  • Step 5
    Bake 375 for 9-11 min. or til bottoms are browned. transfer to parchmnet paper, or wire rack to cool. Diabetic: one cookie is one serving Total sugar (g) 7 Carbs (g) 12 Calories 82 Diabetic exchange (de) starch 1
