small batch peanut butter cookies
I've completely flunked at being an "Empty Nester". I still cook as if the entire dorm is coming for the weekend. This recipe is perfect for one or two. It makes 15-18 medium-sized cookies. Just enough to satisfy that peanut butter craving. These turn out perfectly every time- soft, thick and just a little chewy. =)

Makes 15-18 medium cookies
Ingredients
- 1/2 c. peanut butter
- 4 tb. butter
- 1/4 c. brown sugar
- 1/4 c. white sugar
- 1/2 tsp. salt
- 1/2 tsp.baking soda
- 1/2 tsp. baking powder
- 3/4 tsp. vanilla
- 1 egg yolk (just the yolk)
- 3/4 c. flour
How To Make small batch peanut butter cookies

Step 1Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.

Step 2Cream peanut butter and butter together with hand mixer. Add brown sugar and white sugar. Mix for two minutes at medium speed.

Step 3Add salt, baking soda, baking powder, vanilla and egg yolk. Mix until blended.

Step 4Add flour, 1/4 cup at a time, until uniform in color. Roll into 1 1/2" balls and place on prepared cookie sheet. (You can roll in sugar, if you wish. I just sprinkle them when they come out of the oven.) Flatten very slightly with the bottom of a glass dipped in sugar. You want them a little thicker.

Step 5Bake at 350 degrees for 8-10 minutes or until golden. Watch closely as all ovens are different. When done, sprinkle with sugar, if desired, while hot. Cool slightly before removing from baking sheet.
