I love shortbread cookies-this recipes is just a little different with the cornstarch and egg yolk but the end result is a tender, flakey, flavorful cookie-it is one of my favorites. At Christmas or other special occasions I dip them in chocolate.

Makes 2 dozen cookies
Ingredients
- 1 cup butter, softened
- 3/4 cup sugar
- 1 - egg yolk
- 1 1/2 cups all purpose flour
- 1/2 cup corn starch
- 1/4 teaspoon salt
How To Make shortbead cookies

Step 1Place butter and sugar in bowl of stand mixer. Combine on low speed. (about 30 seconds.

Step 2Add yolk, then flour, corn starch, and salt on low speed. Mix just until the dough comes together (1-2 minute.

Step 3Wrap dough in plastic wrap and refrigerate 30 minutes or more.

Step 4Roll dough out to 1/4 inches thick. Shape in pan or cut into desired shapes.

Step 5Place on cookie sheet and chill for one hour.

Step 6Bake at 275 degrees for 30 minutes
