I love shortbread cookies-this recipes is just a little different with the cornstarch and egg yolk but the end result is a tender, flakey, flavorful cookie-it is one of my favorites. At Christmas or other special occasions I dip them in chocolate.

Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1 - egg yolk
  • 1 1/2 cups all purpose flour
  • 1/2 cup corn starch
  • 1/4 teaspoon salt

How To Make shortbead cookies

  • Step 1
    Place butter and sugar in bowl of stand mixer. Combine on low speed. (about 30 seconds.
  • Step 2
    Add yolk, then flour, corn starch, and salt on low speed. Mix just until the dough comes together (1-2 minute.
  • Step 3
    Wrap dough in plastic wrap and refrigerate 30 minutes or more.
  • Step 4
    Roll dough out to 1/4 inches thick. Shape in pan or cut into desired shapes.
  • Step 5
    Place on cookie sheet and chill for one hour.
  • Step 6
    Bake at 275 degrees for 30 minutes
