sea salt caramel cookies

This is a cookie recipe I like to make when I want a taste of sea salt caramel. This is more like a shortbread cookie. It is also an egg-less recipe as well. This recipe does fair better as a small batch recipe.

Ingredients

  • 1 1/2 sticks unsalted butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch mild chili powder

How To Make sea salt caramel cookies

  • Step 1
    Preheat oven to 325 degrees. Brown the 1 1/2 stick butter in a skillet. You will know when it is brown when the butter turns slightly golden. Whisk together flour, baking soda, and chili powder in a separate bowl.
  • Step 2
    Pour browned butter into a medium mixing bowl and add 1/2 cup brown sugar and vanilla extract.
  • Step 3
    Add wet ingredients to the dry and fold until incorporated. If it is dry, add a touch of water. Pinch off 1 1/2 inch amounts and roll gently in your hand just until a ball forms. (this has to be done fairly quickly or the mix will dry out and it will crumble) Place on baking sheet and press down to flatten. sprinkle a tiny amount of sea salt on top. (If you don't want the sea salt, you can sub salted butter for the unsalted.)

    Bake until just brown around the edges.
